Take Five Salsa Omelet


Today I knew that I was going to work on a lot of school work and decided to make us a healthy meal for breakfast that would carry us for hours.  The leftovers of the batch of yesterday’s black bean dip sat in the refrigerator ready to be eaten, a dozen eggs lay next to it.  Time to make Salsa omelet.
           
Take Five Salsa Omelet

            First step, start heating your cast iron pan, eggs cook best in a properly heated pan.  Crack three eggs in a bowl and add a couple glugs of milk, stir until the eggs and milk are evenly mixed together.  Pure the egg mixture into the pan and turn down the heat a bit.  Grate your favorite cheese, add onion and green peppers.  As always, salt and pepper to taste.  Flip omelet in half when the eggs no longer look runny.  I often cut mine in half so I don't make a mess. I need  a larger spatula.  Place omelet on a plate and scoop some black bean salsa on top. 

One three egg omelet is enough for two people.  Remember, portion size is the name of the game when it comes to eating healthy.  Don't let the bear beg you into seconds on this one.
