Super Tender Pot Roast

Today my oldest daughter Amanda and our son-in-law, Michael drove up from South Carolina for a visit.  Sitting around my kitchen table with all of my kids, including Rita, (Ted’s girlfriend), made the planets line up, the lion lay down with the lamb and peace in all the earth as far as I’m concerned, even if only for a moment.  I love my kids and sitting around laughing, interrupting, joking, teasing, and chatting.  I’ll be disappointed if the night ends early.  These “whole family visits” do not happen as often as I would like, but when they do, it leaves a big smile on my face for months to come.  

            Super Tender Pot Roast

            My husband Brian insisted that I call this “I can’t believe a good recipe is so short Pot Roast,” but it’s no great secret that a lot of great tasting food takes very little to produce.  “It’s not the size of the recipe that counts, it’s the way you stir the pot”.  (Brian had a reply to this, but that’s another story).

          Place pot roast in crock pot.  Fill water in the crock pot so that half the meat is exposed, and half is under the water.  Add nine (9) shakes of Worcestershire sauce and drop two bay leaves into the water.  Sprinkle rosemary, sage, thyme, salt and pepper on top of the meat.  Cook in crock pot for nine (9) hours on medium.  This meat also doubles as truly great sandwich food later, but don’t listen to my husband when he tries to tell you to put half an inch of mayonnaise on it.
