This morning I decided we would eat a large breakfast, forgo
lunch and eat dinner as soon as we get home.
By 1:00, my stomach got the memo about skipping lunch and did not have a
problem just eating a granola bar. My
big mistake took place when I decided to drink a Fizz fruit drink. All the sugar, from fruit or not, totally
wigged out my blood sugar, putting me into a quick spiral down to what my “bad
place”. My body started feeling weaker
and weaker. My mood proceeded to decline
to a all out mean Dorothy. “I needed
food!” Said the little mean voice in my head.
While driving down the road, I took note of where the next McDonalds were
located on the path that we were on.
Somehow, Brian managed to avoid every quick food stop in my mind. I told myself that it was ok because I would
make some food at home and save money. “Maybe I don’t want to save money, I
want to eat!” The little person in my
mind was tormenting me with thoughts of Big Mac and fries. “No, tuna fish, I will make a healthy
sandwich when I arrive home.” I won the
fight with my evil brain twin and arrived home in time to make a quick
sandwich, then run back to school for my Journalism class. In no time, I found
myself eating toasted bread and freshly made tuna salad. My stomach stopped growling and my brain
started thinking clearly again. I think
I will ditch the idea of skipping lunch to save money and pack a sandwich.
Less than 5
minutes Tuna Salad
One or two
cans of Albacore tuna in water, I prefer the lighter flavor of this type of
tuna. Do not buy the cheap cans, I have
found that they contain more water and less tuna. Remember the can tells you the net weight of
all the contents inside the can, not just the tuna.
Open the
tuna and place into a bowl. Fork the
meat breaking down the larger chunks. I
like to make sure that all the pieces are about the same size. Now cut up half a celery stalk, two green
onions and some green pepper. Add
desired amount of mayo. I do not like
mine really wet and scoop and stir as I go until I see it is the desired
wetness. Add some salt and pepper to
taste and enjoy.
