Hectic Morning OMG Fancy Eggs


            Last night I had to write four English papers by midnight.  Normally I want to crawl between the cotton sheets, Fen under the covers at my side, Luna laying in Brian’s spot and either Muca or Mika at my feet, by ten thirty.  Labor Day night I parked my body in my Lazy Boy chair and wrote until my wrists ached.  My intentions were to have all of my work done by Saturday night.  Luna’s middle of the night seizures changed my Saturday plans.  The sleeping hour had to be extended; Brian actually slept past one in the afternoon.  Dealing with a dog strung out on Diazepam is no fun.  Her restless agitated pacing around the house, with drooling mouth, wanting to be right next to someone the whole night works against sleep.  Monday night homework turned into the Tuesday late, late show.  Tuesday morning sleep was just as late.  I only woke up when I did because my daughter repeatedly sent me texts to the effect that she needed to be at her doctor on the other side on town within twenty-five minutes.  Ouch!  Quickly throwing on my clothing, I dragged my caffeine-deprived body out the front door.  An hour and a half later, I was frantically showering so I could make breakfast before getting off to school.  The afternoon was much more relaxed and peaceful…not!  Let’s forget the afternoon and talk about those eggs:

Hectic Morning OMG Fancy Eggs (with potatoes and cheese):
1.         Take one or more baked potatoes from the night before and dice them, cook in butter until golden brown.  (Add chopped onion if you like)
            2.         Pour a six scrambled egg mixture over the potatoes.
            3.         Cut or shred cheddar cheese and add to the (mostly) cooked eggs and potatoes.
            4.         Salt and pepper to taste (as always)
            5.         Feel free to add:  bacon, ham, sausage, green peppers, mushrooms…
                        Feeds 3 (big) or 4 (small)
This is a breakfast meal that needs butter.  Do not ruin the flavor of a good egg dish by substituting the most important ingredient.
