My daughter Amanda and her husband travel all over the Eastern United States. Today she expounded the wonders of Mississippi cooking. She spoke of red beans and rice, of fried green tomatoes, and catfish. Being a Yankee, and a Detroiter no less, I could not understand what the logic of creole food is, the ingredients, or what it is supposed to taste like. The closest I've come is watching the movie "Fried Green Tomatoes". I got to thinking so much about it, I thought I'd just do it! Luckily, I happened to have some green tomatoes on the vine. By the way, I'm not sure how much the cuisine of Mississippi is actually creole; I might just have to look it up.
Fried green tomatoes
1 cup of flour
12 tortilla chips (1/2 cup corn meal)
1 hot dog bun (bread crumbs)
Place in food processor mix until mixture is consistent. (like flour)
Add 3/4 cup of water
2 eggs
Salt and pepper
15 fresh basil leaves
Mix until batter cake batter consistency.
In a deep pan pour two inches of vegetable oil. Start heating the oil.
Go out to your garden and select firn green or yellow tomatoes. Slice into half inch pieces. Dip the slices into the batter, place gentile into the oil. Cook until golden brown. Serve with ranch dressing.
I know that the chips and bun seemed strange in the recipe, today was a "what's in the cupboard" evening.
