Dorothy's meatloaf


My favorite comfort dinner is meatloaf, baked potato, salad and cornbread with butter and honey.  Ok, I need to be honest, when I say “meatloaf” I mean my meatloaf, and no other.  Some time ago, a close friend called me up, inviting our family for dinner.  She informed me that we would be eating meatloaf.  Since she was serving my favorite meal I accepted at once.  When I first entered her home, the smell of dinner greeted me, causing my stomach to growl, as if begging me to sit down and start eating my dinner.  When dinner was served, however, the meatloaf was closer to a meat football than anything else.  In fact, I think a regulation football has more moisture.  Politely, I ate my serving of the sad little loaf, but not until I first covered it with a lot of ketchup.  After we left that evening, I told Brian I’d better stick to eating my own recipe.  Choking down dry meat makes it hard to smile at my friends.
            Dorothy’s Ever-Moist Meatloaf:
            2 lbs ground beef
            1 cup ketchup
            1/8 cup mustard
            1 onion chopped
            1 garlic clove crushed
            ½ green pepper diced small
            2 eggs
            1 cup oatmeal
            ½ cup milk
            Worcestershire 4 to 6 shakes                              
            salt and pepper
 Completely mix all ingredients together.  Place into a bread pan. 
Mix ketchup, small amount of mustard and 1/3 brown sugar.  Spread on top of the uncooked meatloaf.
Bake in a 350 oven for about an hour and a half. 
Warning:  This is not the kind of thing you put in the oven while you nap.  Don’t overdo the cook time unless you want a football!
