Comfort Pancakes Dorothy’s Style


Am I finished with my blog, or am I still writing it?  That is the big question for the day.  I know that I made the “Big announcement” the other day that I would no longer be writing my food blog.  Today, Brian and I when to Aquinas College to a novel writing contest; for the month of November, students were encouraged to try to write a complete 50,000 work novel.  I really wanted to take the challenge, but my concussion head issues made it difficult for me to do my normal school work without trying to add a novel to the already crazy study schedule of mine.  Brian on the other hand decided to make a stab at it, some his best work being done in the last 24 hours before the contest.  While at school I ran into Danielle and Sarah, two girls that I have had in many different classes over the last couple of years.  I informed them that I would not be writing my blog anymore because I was tired of having to measure while cooking.  They both immediately started telling me how much they really enjoy my blog and that I should continue without measuring.  “Just say, use a handful of this and a pinch of that.” One of the girls said.  Another said, “Look, if a person does not know how to cook, they will learn by reading your blog.”  Wow, I could not believe how much they liked my blog.  So in honor of my AQ girls I will continue my blog.  It might not be an everyday affair, but I will continue to write about the Rabourn family and food.

            While at the contest, I started craving pancakes.  I am sure that the big poster hanging on the stage of a stack of pancakes had nothing to do with it.  As soon as I got home I started working on pleasing my craving.

It is very important to first start heating up your pan.  I prefer to use a cast iron skillet for my pancakes.
In a bowl crack on egg, add about a cup and a half of milk, ¼ teaspoon of salt, 1 1/2 to 2 cups of flour, 1 teaspoon of sugar, and 1 teaspoon of baking powder.  Mix well with a whisk.   Butter you pan, add one ladle of pancake batter to the pan and smear it around to make it a bit larger.  I think my pancakes thin.  Cook until the bubbles start to pop, flip and cook for a couple more minutes.  When serving butter each pancake and add crushed walnuts and syrup.  Enjoy!

    I was also thinking about posting for you not to stop your blog, b/c I'm enjoying it so much ;) isn't there some flour to be added to the mixture ? ;)) now I'm craving pancakes too and I'll make some tomorrow ;)

  4. These are magical pancakes. hahahaha! Yes, there is flour, I was in a hurry and forgot to add it. If you read the post again, you will see how much flour to add.
